We take pains to bring you the most authentic bagel we can muster: boiled and baked on a cedar plank next to a live fire! The plank is soaked in water and covered with linen fabric. After boiling, the bagels go straight onto the plank and into the oven. The steam evaporating off the plank infuses a slight cedar flavor into the bagels. After only 1-2 minutes of this, we flip the bagels onto the hearth to finish their bake.
We aim for a somewhat tough, chewy bagel with a browned, malty crust. Make yourself a hearty breakfast sandwich!
