Deep Roots Milling’s Silver Bread Flour is a finely ground, sifted flour milled from “Redeemer” wheat grown in Pennsylvania and “NuEast” wheat grown in Rocky Mount, VA.
We use this flour more than any other in the bakery, and it is a great first choice for a baker used to using white all-purpose flour. Silver is about 85% extraction, meaning 15% of the larger bran pieces have been removed from the flour, making lighter and easier-to-rise dough. While technically this is a bread flour, it is relatively low in protein and is great for tender breads such as baguette or brioche.
