This loaf is made with sifted wheat flour and “Kentucky Rainbow” cracked corn grown by us at Great Day Gardens here in Forest. The corn is nixtamalized before added to the dough, which gives the bread a hominy-like corn flavor.
A round, unsliced hearth loaf. Toast it and serve with chili, or make grilled cheese or garlic bread.
Ingredients: Wheat flour, water, cracked corn, sourdough starter, salt, calcium hydroxide (lime), malted barley.
