| What is Sorghum? It’s a product you may find at your local farmers market or you see on our bread’s ingredient list. Sorghum, pronounced sor-gm, is a sweetener that is able to be grown locally. Often compared to molasses, it is a syrup deriving from the Sorghum plant. Originally from Africa, Sorghum arrived in the US during the 17th century where it flourished in the American South due to the heat and dry conditions. Whereas Molasses, another syrup-like sweetener, is derived from a sugar cane, Sorghum comes from the green cane juice of its plant. The green juice is boiled until it becomes a sugary concentrate. Sorghum is a bit thinner than molasses and has a very slight sour taste. It can be used as a sweetener in baked goods (how Michael uses it in breads like Multigrain and Farmhouse Wheat), coffee, or even drizzled over waffles. Want to give it a try? We sell it through our partners at Shenandoah Valley Family Farms. You can find it at our Rookie’s farm stand and at the Lynchburg Market. |
